Last night I was catching up on my google reader when I saw Lauren’s recipe for White Chocolate Peanut Butter

I have only tried making almond butter once before and it was some what of a disaster!

It was crumbly and overly oily.

I was skeptical to try again but white chocolate nut butter just sounded to good to pass up!

I didn’t have any peanuts on hand so I went with almonds.

It took quite a bit longer then I thought, but in the end I FINALLY achieved, drippy, SMOOTH white chocolate almond butter!!!!

I processed the almonds alone for about 10 minutes then I added coconut oil and processed for about 5 minutes. The Salt, Vanilla were added followed by the melted white chocolate.

It tastes AMAZING!

I only changed the recipe slightly from Lauren’s, but here is what I used.

I spread some on toast this morning with jelly, banana and chia seeds.

Gooey PERFECTiON!
