Hey everyone! I AM BACK! It will be slow catching up from my crazy weekend but I will do it!
I obviously made the dessert for my sisters Bridal shower. I went with mini cupcakes because they are bite size and I figured people would be able to have more then one if they wanted!
I kept the design simple but made the flavors FANTASTIC!
I made 2 different flavors.
and MARGARITA! from Vegan Cupcakes Take Over the World! PS. these cupcakes were bursting with AMAZING tequila flavor! I didn’t use the recipe they had in the book, so I found this lime tequila buttercream instead!
The carrot cake was exceptionally moist because there was CARROT BABY FOOD in the recipe! SO good, very spicy
We finished in about 6 hours.
I was exhausted by the end and Wasn’t thinking when I stored them in Air tight containers.
I woke up the next morning and the fondant was sweating and starting to drip down the cupcake.
Thanksfully I got them into cardboard cupcake boxes, and kept a fan on them and they firmed back and and I was able to save them.
